In short
14C28N is a nitrogen-alloyed martensitic stainless steel developed by Sandvik of Sweden, usually hardened to around 58–62 HRC. It is genuinely good steel — easy to sharpen, tough, and very rust-resistant — which is why it is so common in folding and outdoor knives. In a kitchen blade it is a solid, budget-friendly choice, but it will not hold a fine edge quite as long as a harder Japanese steel such as VG10 or AUS-10.
What is 14C28N steel?
14C28N is a martensitic stainless chromium steel made by Sandvik, the Swedish steel producer, and designed specifically for knife blades. Its distinguishing feature is nitrogen: alongside the usual carbon and chromium, it carries a small, deliberate nitrogen addition that improves hardness and corrosion resistance at the same time — two things that normally pull against each other.
It is the refined descendant of Sandvik's earlier 13C26 and 12C27 blade steels, reworked in the late 2000s in collaboration with knife makers who wanted better corrosion resistance without giving up the easy sharpening those steels were known for. You will find it today across a very wide price range of production knives.
One correction worth making, because it is repeated a lot online: 14C28N is not a powder-metallurgy steel. It is conventionally melted and supplied as precision-rolled strip. That matters, because powder steels behave differently — they carry larger, harder carbides that hold an edge longer but fight you on a stone. 14C28N's fine, evenly distributed carbides are exactly why it sharpens so easily.
14C28N composition and hardness
Sandvik's published composition is roughly as follows. Small variations between production batches are normal.

Sandvik's recommended working hardness range is broad — roughly 55–62 HRC depending on heat treatment — and most knife makers land somewhere around 58–62. 14C28N vs VG10, AUS-10 and 12C27
No steel wins on everything. Edge retention, toughness, corrosion resistance and ease of sharpening trade against one another, and 14C28N is deliberately balanced rather than extreme.

Against 12C27, its older Sandvik sibling, 14C28N is the straightforward upgrade: more carbon and the nitrogen addition give better hardness and corrosion resistance for the same easy sharpening. Against VG10 and AUS-10, the Japanese steels used across our own range, the picture flips. Both are typically run harder and carry a richer alloy mix, so they take and hold a finer edge for longer — the thing you notice most in a kitchen, where a knife is asked to slice cleanly rather than survive a rough day outdoors. Against powder steels such as S30V, 14C28N gives up meaningful edge retention but is far easier to bring back to sharp with ordinary equipment, and costs considerably less.

Is 14C28N good for kitchen knives?
Yes, with a caveat. Its corrosion resistance is excellent, which matters in a kitchen full of acidic food and washing-up water, and it sharpens back to keen very quickly — a real advantage if you are not confident on a stone yet.
The caveat is edge life. A kitchen knife spends its life making long, clean slices, and that is exactly where a harder, finer-grained steel earns its money. At the same skill level and the same care, a VG10 or AUS-10 blade will simply go longer between sharpenings.
So the honest answer is: if you find 14C28N in a knife you like at a price you like, buy it without worrying — it is proper steel, not a corner cut. If you are choosing a knife specifically on how long it stays sharp, look at the harder Japanese steels instead. And bear in mind that steel is only one variable; blade geometry, heat treatment and grind often matter more than the alloy name on the box.
Sharpening and caring for 14C28N
This is where 14C28N shines. It responds well to almost any method — a whetstone, a honing rod, or a guided sharpener — and it does not demand diamond abrasives the way high-vanadium powder steels do.

- Because the steel is comparatively ductile, it can smear slightly rather than shear cleanly at very fine grits — a light pass on a fine or diamond rod cleans that up.

- Stainless is not rust-proof. Dry the blade after washing rather than leaving it wet — the same rule that applies to any stainless kitchen knife.
